Job overview

Key responsibilities:

• To support the Chef Manager in delivering a first class, fresh and nutritious food offer and service to all customers 

• To manage the day-to-day food production and lead the department in the Chef Manager’s absence

Specific tasks:

Service quality 

• To deliver a consistently high standard of food 

• To plan and delegate the workload in the most efficient and effective way 

• To follow the instructions and advice of the Chef Manager, such as ingredient content, production methodology and equipment use 

• To contribute ideas towards innovating and developing the student menu

• To pass any comments or feedback from customers onto the management team 

Team working

• To support the Chef Manager in managing the team, and manage the team in their absence 

• To train and support the team’s professional development as may be required from time to time and act as a role model of professional and behavioural standards

• To work at all times with consideration for the safety and wellbeing of colleagues

• To work flexibly and enthusiastically to support the team during periods of intense activity and in providing a catering service at events

Health & Safety 

• To maintain food safety and hygiene systems and general risk controls, ensuring compliance with current and future legislation in accordance with the department’s processes and utilising up-to-date knowledge 

• To ensure that customer food allergies and intolerances are catered for and that food contamination risks in production and service are minimised or eliminated where possible through compliance with policies and training received 

• To partake in ongoing, daily and periodic cleaning activities 

• To comply with LAE Tottenham’s Health and Safety policy 

• To operate all equipment safely in accordance with training and report any damage or irregularity with work practices, equipment, fixtures and fittings to the Chef Manager

About the London Academy of Excellence Tottenham

The place for Academic rigour, LAE Tottenham is a 16-19 free school which opened in September 2017 in state of the art premises next to White Hart Lane stadium, offering academically rigorous A Level subjects.

The principal education sponsor, Highgate School, provides significant educational support, including seconded teaching staff. The business sponsor, Tottenham Hotspur Football Club, provides funding and employment links. LAE Tottenham also benefits from eight other independent school partners each offering departmental support, CPD, expertise and opportunities for shared student experiences.

LAE Tottenham offers an academic curriculum focusing on ‘hard’ A Level courses as defined by leading universities which is complemented by an active co-curricular programme and the results of the first two cohorts of students put the school in the top 2% nationally for both attainment and progress.

LAE Tottenham is the Sunday Times 'State 6th Form College of the Year 2020-21' and is graded "outstanding" in all areas by Ofsted.

LAE Tottenham runs the Chrysalis East programme which supports local secondary and primary schools to ensure that students across Tottenham are able to reach their full academic potential. The programme deploys 'partnership teachers' who work across our partner schools in a range of projects.
