The in-house alehouse aims to produce five barrels of beer - about 1,440 pints - a week after it opens on June 1.
And the college, which already runs a commercial bakery, florist, hairdressers and restaurant, will celebrate the event with a tasting session featuring home-produced delicacies such as smoked mussels and oysters, sausages and air-dried ham.
Students from the college's new higher national diploma in licensed trade anagement and its catering courses will use the brewery to master the art of producing the perfect pint.
The brewery has just been granted a licence to run a bar on the premises but it will also sell its beer to students' unions and local pubs and help local real-ale brewers to develop new organic and fruit beers.
David Ashen, head of the department of hotel, leisure and beauty, admitted he would be taking more than a professional interest in the brewery's output: "I do like a nice drop of beer myself. But a couple of pints a night is enough for me."
