Praise, pensions and holiday pay;Postscript

IN THE article on post-16 choices, (TES, August 27) reference was made to the poor reputation of colleges in the hospitality and catering industry. In case your readers think that this is a universally-held view, here is a quotation from John Williams, Maitre Chef des Cuisines, Claridges, London.
