IN THE article on post-16 choices, (TES, August 27) reference was made to the poor reputation of colleges in the hospitality and catering industry. In case your readers think that this is a universally-held view, here is a quotation from John Williams, Maitre Chef des Cuisines, Claridges, London.

"We choose our chefs as carefully as all the other ingredients which go towards making Claridges a world leader. We consistently select staff trained at Stratford upon Avon College because they help us to maintain this quality - this year, eight of our 55 chefs came from Stratford College. The college shares our ethos of striving for perfection."
