This is a practical aimed at KS4 Science students that can help them to understand the terms polymorphism and crystals/crystalinity and how these can affect the properties of materials. Chcocolate is chosen as an example to demonstrate with the help of some easy experiments where chocolate is heated and colled at different rates. The presentation provides an introduction to the topic. The lab instructions can be used to be given out to students. This resource could even be used for A-level chemistry students explaining the same prinicples as described above. It could also be used to demonstrate how natural products like chocolate are actually a mixture of different substances.
