A quick and easy dinner for teachers: coconut pie

A few weeks into term and I’m usually exhausted and already feeling the pressure. Sometimes it’s easy to lose your rational grip on things.

So this recipe is a tangible (edible!) reminder of how to resolve the seemingly impossible. Then you can get back to tackling your to-do list.

Ingredients

  • 4 eggs
  • ½ cup plain flour
  • ¼ cup margarine
  • 1 cup caster sugar
  • Pinch of salt
  • ½ tsp baking powder
  • 2 cups milk
  • 1 cup desiccated coconut
  • 1 tsp vanilla essence

Method

Heat the oven to 350F/180C/160C (fan oven)

Put all the ingredients in a blender. Together. All at the same time - with gay abandon and scant regard for due baking process.

Blitz to a liquid - technically a batter, of sorts (a couple of seconds).

Pour into a lightly greased pie dish (8-10”).

Put in the oven for 30-40 minutes.

Marvel at the resulting alchemy: from chaos to order.
