I got pupils to work in pairs to write their own weather forecasts for one of these countries, then they took turns to read it out while the one who wasn't reading drew symbols on the map in the right place.

Nice idea- I changed it to French speaking countries, meaning that pupils could research the country a little bit before hand so that weather forecasts were accurate :-)
