Ingredients

1 onion
Curry powder (mild, medium or hot)
Salt
1 potato
1 carrot
Portion of peas
Vegetable oil
Filo pastry

Method

  1. Peel and chop the onion, carrot and potato
  2. Heat vegetable oil in a pan (ensure it has a lid)
  3. Add the chopped onion and fry for 3 mins
  4. Add 1 level teaspoon of curry powder (you may want to add more or less) and salt and then stir.
  5. Add the chopped vegetables and peas
  6. Stir in some water to prevent burning and put on the lid
  7. On a low heat allow to cook for about 10 mins - stir often
  8. Unroll filo pastry and use 2 sheets - place one on top of the other
  9. To make larger samosas cut the sheet into 2 strips. To make smaller ones cut the sheet into 3 strips.
  10. Add a large spoonful of filling to the pasty and repeatedly fold over forming triangles - rather like folding up a flag.
  11. Put them onto a greased baking tray
  12. Place oil on top of each samosa to help them become golden
  13. Place in a preheated oven at 200C/180C fan/gas mark 6 for around 15 minutes until golden
