A shooting accident in 1822 was the beginning of a gory but very useful series of experiments to understand how the human stomach plays a part in digestion. This article explores William Beaumont, who was left with an open stomach after a shooting accident. Experiments were performed to explore the role of gastric juices, enzymes and alcohol on digestion. Part of the Wellcome Trust's Big Picture: Food and Diet (www.wellcome.ac.uk/bigpicture/food).
