Ingredients

3 medium potatoes
Oil to grease pan
1 small onion
250g vegan/vegetarian plant based mince/beef mince
1 carrot
3/4 mushrooms and/or 30g peas
1 tablespoon tomato puree
Stock cube dissolved in 300ml water
150ml soya milk
butter for mash (optional)

Method

  1. Peel and chop vegetables
  2. Bring potatoes to the boil and then simmer
  3. Put a little oil in a pan and add onions
  4. Fry onions and then add veggie/vegan mince (you can also use beef mince)
  5. Add vegetables
  6. Add tomato puree
  7. Add stock
  8. Mash potatoes
  9. Put mince mixture in an oven dish and then layer the mash on top
  10. Put in a preheated oven at 180 C fan oven/200 C no fan/gas mark 6 for around 20 minutes.
