Short YouTube video showing how to make mini pavlovas
Ingredients
3 eggs
150g caster sugar
1 teaspoon cornflour
1 teaspoon lemon juice
250ml double cream
200g raspberries/strawberries
Method
- Preheat oven to 140C fan/160/gas mark 1
- Whisk the 3 eggs whites until white in colour and stiff
- Whisk in half of the 150g of sugar for about a minute
- Fold in the remaining sugar, 1 teaspoon of cornflour & lemon juice
- Spoon or pipe the pavlovas onto a baking sheet lined with baking paper
- Bake in the oven for around 25 minutes, until crispy on the outside and easily comes away from the paper
- Cut up the strawberries
- Whisk the double cream until it thickens and becomes whipped cream
- Add the cream to the pavlova and then decorate with fruit
