Short YouTube video showing how to make mini pavlovas

Ingredients

3 eggs
150g caster sugar
1 teaspoon cornflour
1 teaspoon lemon juice
250ml double cream
200g raspberries/strawberries

Method

  1. Preheat oven to 140C fan/160/gas mark 1
  2. Whisk the 3 eggs whites until white in colour and stiff
  3. Whisk in half of the 150g of sugar for about a minute
  4. Fold in the remaining sugar, 1 teaspoon of cornflour & lemon juice
  5. Spoon or pipe the pavlovas onto a baking sheet lined with baking paper
  6. Bake in the oven for around 25 minutes, until crispy on the outside and easily comes away from the paper
  7. Cut up the strawberries
  8. Whisk the double cream until it thickens and becomes whipped cream
  9. Add the cream to the pavlova and then decorate with fruit
