Here’s an easy way to see what your students understand using an exit ticket. There are two headings x-int and y-int with only some values in the spaces, the third column is blank for their answer (eg if x-int =2 they can answer any equation with an x-int of 2). The students have to put their equation in the blank column (you could also ask them to draw it). You can make the rule that no equation can be used twice (eg x-int=0 and y-int=0 not using y=x^2).
If you put values in both columns (x & y) will make it even more challenging.
I have also used this with cubics, giving several x-intercepts which my students found quite challenging!
