The Boston Matrix adapted for use within a retail / catering outlet. This form of analysis was / is commonly used in Catering management and known as 'Menu Engineering' - said to improve profitability by some 15% with ease by allowing the user to analyse sales and profitability in order to fine tune price / sales in order to maximise profit.

This analysis also allows a manager to direct activity into more profitable activities for staff leaving low popularity / profit (but often necessary activities) to times of general low activity.
