Ingredients
2 medium bananas (ripe or over ripe)
75g melted butter or margarine
150g granulated sugar
1 large or 2 small beaten eggs
1 teaspoon of vanilla essence
200g self raising flour
2 lb loaf tin
Method
- Preheat the oven to 160 C fan oven/gas mark 3
- Mash the bananas in a mixing bowl
- Add the melted butter or marg
- Mix in the sugar
- Beat the egg and stir into the mixture
- Add 1 teaspoon of vanilla essence and stir
- Sift 200g of self-raising flour
- Fold in the mixture with a wooden spoon or spatula
- Put mixture into greased/lined loaf tin
- Bake for around 50 - 60 minutes (put foil on top if it browns quickly)
- Use a skewer or toothpick or similar to check the banana bread is cooked throughout. If when the skewer is clean when removed from the banana bread it is ready to be taken out of the oven
- Leave in the loaf tin for 10 minutes then remove it and place on a cooling rack.
- You can add sugar or icing sugar over the top if you wish.
