Short video showing students how easy it is to make ricotta from cow’s milk.

Ingredients

1 litre whole or semi-skimmed milk (non-fat milk will not separate easily into curds)
1/2 teaspoon salt
50ml lemon juice (lemons or juice in a bottle)

Cheese cloth, muslin or very fine sieve

Method

  1. Put the milk into a saucepan
  2. Add salt
  3. Bring to boil then place on lowest heat
  4. Add lemon juice
  5. Take off heat and leave for around 15 minutes
  6. Put a cheesecloth into a colander and place colander into a bowl
  7. Allow to drain and squeeze out excess liquid
  8. Ricotta is ready to use
