A set of 9 questions designed to get students to do some reading on the subject and use existing organic chemistry knowledge to explain the effects of unsaturation on the properties and health implications of fats. The questions are to be answered by looking at a couple of web pages (http://www.indiana.edu/~oso/Fat/Simplifying.html) and watching a short video.

It covers:
- Saturated, monounsaturated, polyunsaturated.
- Full and partial hydrogenation
- Homogeneous catalysis
- Trans fats
- The increased use and near-ubiquity of palm oil in consumer products, and the toll this has taken on Borneo's rainforests
